In the Vejle River Valley, Ådal Ørred produces organic trout as a sustainable alternative to salmon. Nordvildt is a company run by passionate hunters in North Zealand who know nature and wildlife in depth. Nordvildt supplies meat from game that has lived a free life, without stressful slaughter or unnecessary transport. With a focus on ethical hunting and short supply chains, Nordvildt embodies the LOCA Manifesto’s ambition to unite animal welfare, flavour and responsibility.

Troldgaarden is Denmark’s largest producer of black-and-white Danish Landrace pigs—a breed with deep roots in Danish food culture. With initiatives such as Gartnerhjælpen, where ‘imperfect’ vegetables are given new life in LOCA’s kitchens, AB Catering has become a key partner in our sustainable operations.
