FUNGA FARM
Urban mushrooms with big flavour and a small climate footprint
At Funga Farm, mushrooms are cultivated as small, sustainable wonders – full of umami and natural richness, yet with a minimal climate footprint. Funga Farm’s specialty mushrooms are produced in Brøndby, where selected residual resources are incorporated into a new cycle that results in high-quality edible mushrooms. Their curiosity and experimental approach reflect the ideas of the LOCA Manifesto on responsible and innovative food production.

Pioneers in low-impact fishing

Fiskerikajen is at the forefront of low-impact fishing and responsible marine stewardship. At Tvilling in Hirtshals, customers can see the CO₂ footprint of each fish – a new level of transparency. They work in line with WWF recommendations and certifications such as MSC and ASC, and advise customers on greener choices. A collaboration that aligns with the LOCA Manifesto’s commitment to knowledge, responsibility and action.

ÅDAL ØRRED

Organic farming with care for nature and flavour

In the Vejle River Valley, Ådal Ørred produces organic trout as a sustainable alternative to salmon. Here, experience is combined with research into natural methods that strengthen the fishes’ health and reduce the need for medication. The result: fresh trout with a low climate footprint – and exceptionally high quality.

Game with respect for nature

Nordvildt is a company run by passionate hunters in North Zealand who know nature and wildlife intimately. Nordvildt supplies meat from game that has lived a free life, without stressful slaughter or unnecessary transport. With a focus on ethical hunting and short supply chains, Nordvildt embodies the LOCA Manifesto’s ambition to unite animal welfare, flavour and responsibility.

Varde River Valley

Organic diversity from the Wadden Sea

In the heart of the Wadden Sea National Park, Eva and Torben run a farm where lambs, pigs, ducks and geese live in harmony with nature. The entire production – from vegetables to their own abattoir – is based on circular thinking. Varde Ådal’s holistic practices perfectly reflect the LOCA Group’s aspirations for sustainable and responsible production.

Troldgaarden

A free life and honest meat

Troldgaarden is Denmark’s largest producer of the black-and-white Danish Landrace pig – a breed with deep roots in Danish food culture. The animals live outdoors all year round, close to their mother and without nose rings. The good life can be tasted in the meat – making it a perfect match for the LOCA Manifesto’s values of flavour, responsibility and authenticity.

AB CATERING

Data-driven logistics and local ingredients

From its modern terminal in Greve, AB Catering supplies fresh, Danish and organic ingredients, with a focus on data-driven documentation, efficiency and minimal waste. With initiatives such as Gartnerhjælpen, where “wonky” vegetables are given new life in LOCA’s kitchens, AB Catering has become a key partner in our sustainable operations.
